Black Cow Bistro is a new development from the Stillwater team. Principals Craig Will (Head Chef), James Welsh (Sommelier) and Bianca Chellis (Front of House Manager) are the next generation to lead this exciting new venture.
Craig, a local Launceston lad, trained and qualified in Tasmania, has been working in interstate kitchens for the last 8 years to enrich his culinary experiences. He returned to the State in 2007 to work as Second Chef in the highly acclaimed Marque IV Restaurant in Hobart.
Black Cow showcases premium dry aged, free range, grass fed, horomone free Tasmanian beef.
The "steaks" we offer at Black Cow have a range of flavours and tenderness. From our tenderest most delicate and lean Eye Fillet and fat studded Scotch through to the hearty Rib Eye and our more textured and very flavorful
Porterhouse and Rump, our steaks are the best in Tasmania.
All dishes are designed around fresh local produce.

Welcome to the Black Cow Bistro, a new 'up market' steak house from the Stillwater team located in the historic Art Deco Luck's Butchery shop in Launceston, Tasmania.
Dishes are designed around fresh, local produce and served in a warm, casual Bistro-style atmosphere with well priced Tasmanian wines and some full-bodied reds thrown in for good measure.
The Black Cow logo has been inspired by the amazing ancient artworks in the Lascaux Caves in France, which carbon dating indicates are more than 17,000 years old.
